The FDA Food Code prohibits bare-hand contact with ready-to-eat food unless the establishment has a documented, approved alternative procedure and the food is not served to a highly susceptible population.

  • Use deli tissue, tongs, spatulas, or single-use gloves for ready-to-eat food.

  • Hands must be washed before donning gloves and after gloves are removed.

  • Gloves are not a substitute for handwashing, they are an addition to it.

  • Change gloves when they tear, when you change tasks, and at least every four hours of continuous use.
