Cold Holding at 41 F

Cold-held TCS food must stay at 41 F (5 C) or below. The exam tests cold holding more often than hot holding, because cold equipment is where real-world violations actually happen.

Key points:

  • Check the internal temperature of the food, not the air temperature of the unit.

  • Never nest pans above the chill line of a cold well.

  • Use the unit thermometer as a warning only, then verify with a calibrated probe.

  • Ice baths count, but the ice must come up to the level of the food.

Every one of these points maps back to a specific Food Code provision, which is why the exam can test it in more than one domain.
