Ventilation and Makeup Air

Ventilation removes heat, grease, and odors, and it brings in the makeup air that keeps the hood working.

Key points:

  • Clean hoods and service filters on a schedule.

  • Supply makeup air so the hood can exhaust at its rated rate.

  • Never block or tape over a hood or return air vent.

  • Report smoke, dust, or odors that suggest the ventilation system is failing.

Every one of these points maps back to a specific Food Code provision, which is why the exam can test it in more than one domain.
