The Temperature Danger Zone

41 F to 135 F (5 C to 57 C). That range is the single most examined concept on the ServSafe Manager exam, and it appears in every domain — not just the temperature one.

Why it matters:

  • TCS food left in the danger zone grows bacteria fast. The classic figure is that bacteria can double every 20 minutes in that range.

  • The exam measures time in the zone, not temperature alone. Two hours is the point where food must be discarded; the four-hour window applies to food that started cold.

  • Holding, cooling, reheating, and receiving all express the same rule with different numbers attached.

Cooling is the one people fail: 135 F to 70 F within 2 hours, then 70 F to 41 F within 4 more hours — six hours total, and the first two are the hard deadline.
