Employee Illness: When to Exclude

This is Domain 2 and it is asked with real detail. The exam wants the specific report-and- exclude rules, not a general “send them home”.

Exclude (cannot work with food or food-contact surfaces at all):

  • Vomiting, diarrhoea, or jaundice

  • Sore throat with fever

  • A lesion with pus on the hands or arms

  • Diagnosis of Salmonella Typhi, Shigella, Shiga toxin-producing E. coli, or Hepatitis A

Restrict (can work, but no food handling): the same pathogens’ household contact situation, or a wound with an infected cut that is properly covered.

Add the Big 6 to your memory: Salmonella Typhi, Shigella, Shiga toxin-producing E. coli, Hepatitis A, Norovirus, and Nontyphoidal Salmonella. The Big 6 are the only ones that require exclusion of household contacts, and they must be reported to the regulatory authority.
