Sanitizer Test Kits
A test kit is the only way to know a sanitizer is at the right concentration, because both too weak and too strong fail.
Key points:
Test the concentration before use and whenever a new batch is mixed.
Use the kit that matches the sanitizer: chlorine, quaternary ammonium, or iodine.
Change the solution when it is dirty or when the concentration drops.
For chlorine, the common target is 50 to 99 ppm with water at least 75 F.
Every one of these points maps back to a specific Food Code provision, which is why the exam can test it in more than one domain.
