Shellstock Tags and Recordkeeping

Shellstock tags are a traceability record, not decoration. The tag identifies the harvester, the harvest date, and the growing area, which is what makes a shellfish recall possible.

Key points:

  • Keep the tag attached to the container until the last shellstock is sold.

  • Record the date the last shellstock was served on the tag itself.

  • Keep tags in order for 90 calendar days from the date the last shellstock was sold.

  • Never remove a tag just because the container was emptied.

Every one of these points maps back to a specific Food Code provision, which is why the exam can test it in more than one domain.
