A mobile food unit is a licensed operation on wheels, and the exam tests it as a full kitchen with additional constraints.

The unit must be licensed and inspected just like a fixed operation.
Provide a handwashing sink with hot and cold running water, soap, and towels.
Store food at safe temperatures in transit, and keep the unit clean.
Hold sewage and waste water in an approved tank, and never dump it on the ground.
Every one of these points maps back to a specific Food Code provision, which is why the exam can test it in more than one domain.
