Sanitizer Test Kits

A test kit is the only way to know a sanitizer is at the right concentration, because both too weak and too strong fail.

Key points:

  • Test the concentration before use and whenever a new batch is mixed.

  • Use the kit that matches the sanitizer: chlorine, quaternary ammonium, or iodine.

  • Change the solution when it is dirty or when the concentration drops.

  • For chlorine, the common target is 50 to 99 ppm with water at least 75 F.

Every one of these points maps back to a specific Food Code provision, which is why the exam can test it in more than one domain.
