Shellstock Tags and Recordkeeping
Shellstock tags are a traceability record, not decoration. The tag identifies the harvester, the harvest date, and the growing area, which is what makes a shellfish recall possible.
Key points:
Keep the tag attached to the container until the last shellstock is sold.
Record the date the last shellstock was served on the tag itself.
Keep tags in order for 90 calendar days from the date the last shellstock was sold.
Never remove a tag just because the container was emptied.
Every one of these points maps back to a specific Food Code provision, which is why the exam can test it in more than one domain.
