Active managerial control means the manager actively identifies the risks specific to their operation and puts controls in place, rather than relying on a generic plan. It is the conceptual spine of the ServSafe Manager curriculum.

  • Identify the foodborne illness risk factors specific to your menu and operation.

  • Put written procedures in place for each risk.

  • Monitor the procedures, and correct out-of-range results.

  • Verify that the controls work, using logs, testing, and observation.

  • Retrain when a control fails, not only when an employee is new.
