Approved Suppliers

An approved supplier is one that is inspected and complies with food-safety law. Buying from an unapproved source puts the whole operation outside the law.

Key points:

  • Only buy from suppliers that are licensed and subject to inspection.

  • Reject any delivery that arrives without the correct inspection stamp.

  • Keep the delivery record. Milk and shellfish need the same traceability as any other food.

  • Never buy from a roadside stand, a home kitchen, or an unlicensed van.

Every one of these points maps back to a specific Food Code provision, which is why the exam can test it in more than one domain.
