Crisping and the Cold Chain
Crisping is a short refrigerated holding step that makes fresh produce retain water and crispness, which makes it a controlled process on the exam.
Key points:
Crisping is done at 41 F or below, never at room temperature.
Keep produce covered and separate from raw animal food.
Discard produce held above 41 F for four hours or more.
Never store chemicals or raw meat in the same unit as crisping produce.
The exam rarely asks for a definition. It asks what you would do at 2 p.m. on a Friday with a full walk-in and a delivery at the door.
