Date Marking: The 7-Day Rule for TCS Food

What date marking actually requires

  • Ready-to-eat TCS food prepared on site and held longer than 24 hours must be marked with a date.

  • The limit is 7 days at 41 F (5 C) or lower, counting the day of preparation as day 1.

  • Commercially processed food is marked with the date the original container is opened.

  • Food frozen to extend shelf life is counted from the date it is thawed.

The exam tests the counting convention more than the number, because candidates routinely start counting the day after preparation.
