Exclusion vs Restriction

These are the two employee-health actions in the Food Code, and the exam likes to make you choose between them.

Key points:

  • Exclusion means the employee cannot be in the operation at all.

  • Restriction means the employee can work, but not with exposed food or clean equipment.

  • Vomiting, diarrhea, or a Big Six diagnosis points to exclusion.

  • A non-Big-Six illness with an infected hand wound points to restriction plus a covering.
