Garbage Handling and Outdoor Containers

Garbage is a pest and contamination control problem. The exam tests placement, covering, and cleaning frequency.

Key points:

Remove garbage from prep areas as often as needed, and at least daily.
Use containers that are leakproof, durable, and insect- and rodent-resistant.
Keep outdoor containers closed with tight-fitting lids on a smooth, cleanable surface.
Clean containers often enough to prevent pests and odors.
