Ice as Food
Ice is treated as food because people consume it directly, and because it is easy to contaminate with hands, scoops, and storage habits.
Key points:
Never use a glass or a bare hand as an ice scoop.
Store the scoop outside the bin in a clean, protected holder.
Never use ice that was used to chill a beverage or cool a pan of food.
Clean and sanitize ice bins on a schedule, and store ice away from raw food.
Verify it against the source, not a memory of it. On the exam you are given a number, and the right answer is the one the Food Code actually requires.
