Parasite Destruction in Fish

Fish served raw or undercooked must be parasite-destroyed first, unless it comes from approved aquaculture fed formulated feed.

Key points:

  • Freeze at -4 F (-20 C) or below for 168 hours (7 days) in a conventional freezer.

  • Or freeze at -31 F (-35 C) or below for 15 hours in a blast freezer.

  • Or run a combined cycle of -31 F for 15 hours, then -4 F for 24 hours.

  • Keep the freezer log. The exam wants the time-temperature record, not just the temperature.

The exam rarely asks for a definition. It asks what you would do at 2 p.m. on a Friday with a full walk-in and a delivery at the door.
