Washing Produce: What the Food Code Requires

A short rule with common errors

  • Wash raw fruits and vegetables under running water before cutting, cooking, or serving.

  • Do not use soap, detergent, or bleach on produce.

  • Wash even items with a peel or rind that will not be eaten.

  • Cut leafy greens and cut tomatoes are TCS food and must be held at 41 F (5 C) or lower.

  • Pre-cut, pre-washed produce labelled ready-to-eat does not need a second wash.
